It is with deep regret that we announce the passing of Mary Eileen Lawter of Paxton, Massachusetts on April 1, 2024. Mary Eileen died of natural causes. She was 68 years old.
Mary Eileen, more commonly referred to as Eileen, was born in West Point, New York on January 6, 1956 to parents James and Maureen Lawter of Peekskill, New York. Before moving to Massachusetts, Eileen lived in New York City, Washington D.C., Virginia, Washington, Colorado and The Netherlands where she learned to speak Dutch and enjoy a freshly cooked pannenkoeken. Eileen nearly always had a cat friend or two, and would keep up her second language by speaking to her furry friends in Dutch.
Eileen enjoyed singing and playing guitar. A talented artist, Eileen loved to spend her free time creating art in a variety of mediums. Eileen applied her artistic skills in a couple of bakeries, where cake and cookies were her canvas, and fondant and icing were her paint.
A fierce believer in helping those in need, Eileen cooked food in bulk for a homeless shelter in the Lower East Side, as well as working at Haley House and Noonday Farm in Massachusetts. Just prior to her passing, Eileen was using her culinary skills by cooking meals for the monks at St. Joseph's Abbey in Spencer, Massachusetts.
Eileen's parting message on Facebook ended with the quote, “TAX THE BILLIONAIRES!”
Eileen was preceded in death by parents, James and Maureen Lawter and sister, Cathy Lawter. Eileen is survived by her siblings James (Eddith 'Eddie' Holmes) Lawter, John Lawter and David (Eileen Burns) Lawter, her niece, Katie Lawter and more cousins than you can shake a stick at.
